Crab meat au gratin, shrimp Creole, trout Armadine, baked stuffed flounder, jambalaya, court bouillon, green salads dressed up with shrimp or crabmeat, and garlic bread are just a few of the dishes served in our better restaurants. Ask the waiter to suggest and to explain any unknown to you. And, unless you are a victim of occupational ulcers, take his advice. Don’t tell him how to make the salad dressing your way, if you have never tried his. If you are pleased with it and tell him so, he might even give you the recipe; and SEE—you’ve learned something to try on the Thursday Bridge Club back home!
One night before you leave, find a local fisherman and get him to take you floundering. He’ll bring the asbestos torch and spear and basket. Go dressed in Levis that will roll up to your knees, and wear tennis shoes. Stay behind the guide and wade in the shallow waters along the shore. Take along a bottle of mosquito dope, just in case, and if there should be a few don’t spoil the evening by complaining. You have flies and mosquitoes in Winnetka and we do, too.
These strange flatfish which resemble a Dali painting with both eyes on one side of their head, one side of the body a mottled grey, the other white, are a favorite food fish. They are sometimes caught on hook and line but mostly by spear when they bed up in the sands at night.
You may be lucky enough to find some soft-shelled crabs at the same time. Ask the guide to show you how to tell the difference between soft and hard shell crabs, and you’ll really be sorry if you don’t heed what he tells you.
And, speaking of soft shells reminds me that there are many pecan orchards along the Coast. They are harvested in the fall and almost any owner will allow you Id pick up your own for a reduction in price. It’s fun and good for the hips. And we call them PECONS!
